Pineapple Upside Down Murder by Jodi Rath – Guest Post Recipe

Introducing Jolie Tucker, an introverted yet passionate restaurant co-owner of Cast Iron Creations, who, at her best friend Ava’s request, steps out of her comfort zone which leads her into the shade of a killer in the small, cozy village of Leavensport, Ohio. The victim is the villages beloved Ellie Siler who runs the village sweet spot, Chocolate Capers. Jolie finds her grandma Opal is a prime suspect and goes on a search for answers only to find out that her families secret recipes may not belong to the Tucker family at all. Jolie’s job, family, and livelihood are all on the line. The answers are assuredly lethal.

What a great start to a new cozy series. I loved the characters, the town, and the writing style. Jolie and Ava are people you’d want to hang out with in real life, so following along as Jolie tries to clear her grandmother of the suspicion of murder is lots of fun. I can’t wait to read more by this author.

Grandma Opal’s Pineapple Upside Down Cake Recipe

What you will need:

  • 1 stick of butter
  • 2 ¼ cups packed brown sugar
  • Canned sliced pineapples
  • Vanilla cake mix
  • Cherries
  1. Melt one stick of butter in a cast iron skillet.
  2. Place 2 ¼ cups packed brown sugar on the bottom of the cast iron skillet.
  3. Drain ½ of a 20-ounce can of pineapple juice and put it to the side to add to your cake mix. Add your pineapples on top of the brown sugar.
  4. Follow the directions on the vanilla cake mix. (Note: you can also create your vanilla cake mix from scratch.) Add the drained pineapple juice to the batter. Pour the batter on top of the pineapples.
  5. Bake at 350 for one hour.
  6. Wait 10 to 15 minutes, then flip the cake onto a plate.
  7. Add the cherries in the center of the pineapple rings.

Serve and enjoy.

Storage: Cake is best left out and eaten the first two days after baking. After two days, store in the refrigerator and eat cold or microwave for a few seconds to taste.
